If it helps, it seems most of the issues are being caused when being
accessed via NFS not CIFS. I'm writing a 56G file via CIFS without
error. However, there are some lvs that are only accessed via CIFS that
are still having problems.

All XFS are mounted: rw,relatime,nobarrier,logbsize=256k,logbufs=8
