Wow - that is a ton of info! Thanks to all that have replied. I am going to do some testing and see how this works out for us. We may entertain the 3 node setup as well, but it would be strictly 3 nodes all located at the the same site. We have an installed client base of roughly 3000 medical offices all over the northeast US so having a "data center" with a pile of 3rd nodes doesn't sound like something I want to play around with!
There is also the cost factor involved - not all my clients are going to go for the kind of hardware we are talking about here - the smaller rural offices often don't like to even buy one server, let alone 2 or 3. We do of course have some very big clients, these are the reason we are looking at high availability in the first place.

It can be very difficult to "sell" the idea of major changes in our organization. Having been in this business for 41 years now, change comes slow. Even though switching to LVM may seem trivial to some, it will require some big changes to the way we do things. I shudder to think about the number of custom scripts I will have to rewrite so they understand LVM volumes! For so many years now we have have all our data on a plain old ext3 partition. If I were just some guy playing with this stuff at home I would go LVM2 full bore, but there is a lot to thinnk about here first. My focus has to remain on being able to support our clients.

I greatly appreciate all the information and help I have recieved thus far. I have some serious testing and development ahead of me so plear bear with me over the next few months as I attempt to hammer out a solid strategy with DRBD and high availability in general! Certainly going to help me to have such knowledgeable people around to hit with questions!! Think I will get right into getting a good understanding of LVM while I test out doing some backups using the scenario Lar's has so thoughtfully outlined!
